Gluten Free & Fresh: Week 12


It's week 12 and we're back on the cooking wagon with enthusiasm after our week long camping trip.  Oh wow did we miss fresh food.


Peaches were used in one of my favorite smoothies, lets call it a POBY (peaches, orange juice, banana, and yogurt).


Cucumbers, Leaf Lettuce, Mixed Cherry Tomatoes, Red Peppers, and Basil were used in a quick salad.


Yukon Potatoes were baked, smashed, and topped with goat cheese and chives.

Eggplant was made into fries. This is a family favorite, so someday I'll have to actually post the recipe.

Pulots were eaten as snacks, because they were oh so delicious.

We haven't made it to the CantaloupeCarrotsGreen and Yellow Beans, and Spinach; any ideas on what to do with them?
